How do you copy a web-hosts back up to your own hard drive or just backup to online storage?
What way do you do?
How often do you do it, Daily, Weekly, Monthly?

I use cpanel and it has an option to download the created backup. I do it after any major change to my websites. I also pay extra to my web hosts to do automatic offsite backups daily.

I use Amazon s3 that integrated into cpanel to backup my websites data. It works pretty good and I rarely backup data to my PC.

Since I manage my own (or my clients) dedicated servers - whole physical machines, I do automatic backups for every site on every machine and exchange automatically those backups between machines via ftps, so if one machine critically fails, I got backups on other machine.
