GA is tragically flawed and always has been, and there are lots of studies online showing exactly why they are flawed. I don't understand why people even still use it. Your own server-side raw logs will always give you the most accurate results above anything a third party can provide.

For the record, I NEVER use AI for any of my own content. I used to be a professional writer for a print newspaper 30 years ago, so I prefer writing my own content. However, AI can be useful, especially if someone is not a native English writer.

I would question why you think Adsense is important, as affiliate ads will bring in FAR more money with far less traffic, but if you are ok with making less money, then I suppose you can keep begging for mercy with Google. Just seems a waste to me. Even Amazon ads are better than Adsense, and...

Perhaps forums & discussion groups will become less important if people just get a summary result, but then again if forums & groups die off, then where will Google get its results from?

Pick a couple of important, non-indexed posts, and then use internal linkng to lead the crawlbot to your other posts.

Get a link back to content that is RELEVANT to your content being linked to. For example, you don't want a link from a tech site if you sell pet supplies. You also want to get a link from a site that gets crawled frequently, so that it helps you get indexed. Something bigger with more content...

Google can be slow, but even 6 months seems like a long time. Do you have a high spam score or some other reason why it might be an issue? Try getting 1 or 2 backlinks (NOT 100's!!) from a site that gets crawled frequently to see if that helps.

A bit of both. Footer for general links, such as contact, privacy policy, etc, and then use specifically relevant links sprinkled in your content.

The basics are still the same regarding content & relevancy, so any blog or forum that follows those basic guidelines should be ok. Forums should be about engagement anyway and a blog is just content presented in a particular format, but still content nonetheless.

The default for Woocommerce is Stripe already. Is that one not working for you? They are good for most product sales except virtual services, but they should fit your needs perfectly.
