How do you handle plugin updates on sites you do not own?

Updating a client site has the worst risk to reward ratio of anything in this job. Nothing good happens when it goes well, and you own the problem completely when it does not, especially with page builders where a bad update can take a layout apart without throwing a single error.

What I do now is take a files and database backup I have actually restored once before, update on staging, then click through the three or four pages that make the site money instead of just checking the homepage loads. Contact forms and checkout break quietly far more often than anything you would notice from the front page.

The part I have never solved is timing. A security update wants to go out the same day, but same day means no staging pass and no client around to confirm the thing still works. Waiting for a proper window means sitting on a known vulnerability for a week.

How are other people splitting that? And does anyone run automatic updates on client sites and simply accept the occasional breakage as cheaper than the alternative?
