Because at times people could let go of travel and rideshare but fitness is something everyone craves for.
If you can motivate people to consume the content regularly, you win a lot of affiliate deals.

So go with the health and wellness niche. It will reap benefits well if done in the right way.

Health and wellness is profitable but it's very saturated and a lot of affiliate marketers are promoting it. You'll succeed but you'll face challenges in this niche.

You can try Pets, Home or Parenting niche it's less saturated than health and wellness.
